Coffee roasting

Les torréfactions de café

The taste of a coffee depends on its origins and its roasting, which means the time and temperature of cooking the coffee beans. Thus, each coffee will have a unique taste depending on the roasting method used, which obviously varies according to the preferences of each consumer and coffee shop .

Blonde roast

Blonde roast is the one that cooks the coffee beans the least amount of time. They will then be very pale and will be closer to the original taste of a coffee bean, i.e. on the fruity side, which will cause a certain acidity in the coffee. Vegetal and floral aromas can also be released from a cup of blonde roast coffee, which will not be very full-bodied either. This is the type of roast that is often found in third wave style coffees (psttt! Go read our blog article on the third wave to find out what it is!)

Dark roast

As you may have guessed, dark roasting means that the beans are cooked a little longer. Due to the longer cooking time, the coffee loses some of its acidity and barely gains any bitterness, which creates an interesting balance in flavors. The fruit is still very present. Dark roast coffee is smooth and offers a certain roundness in the mouth.

Medium dark roast

This type of roast is most commonly used for Italian espresso. Again, the coffee beans are cooked for longer, giving them a more intense color and flavor. It is the perfect balance between the fruity taste of the coffee and the taste of the roast. The acidity is almost no longer perceptible. The beans also begin to release a little but barely any oil due to the longer cooking.

*Visually it looks like a dark roast coffee, but it has the characteristics of a medium roast

Dark roast

Dark roast, as you will have understood, is the one that cooks the beans the longest. The beans therefore become very dark and even more oily. Looking at the beans, you will also notice that they are larger, because they have swollen during cooking. The taste of dark roast coffee is intense and can offer aromas of dark chocolate and burnt caramel, as well as a toasted taste of charcoal.
